Last year we grew courgettes and they did really well – too well! We had them coming out of our ears!
This year, it’s not quite as bad, but you couldn’t say the green beasts were scarce around the house. So, instead of getting annoyed with them, Claire decided to find an alternative way of using them.
Anyway, the whole ‘raw vegan pasta’ thing was awesome! I cannot believe how good it tasted. I was very sceptical about the whole thing…’what do you mean…vegan pasta salad without pasta???’
Anyway (again), it was good and really refreshing + a great way to use the bloody courgettes!
